750 Mini Cupcakes + A Shocking Surprise

I may have mentioned this before, but this past weekend I was in one of my best friends wedding. More on the actual wedding to come at a later date.  As a wedding gift to her and her now husband Luke, I told them I would bake them all of their mini cupcakes. So, the plan was to make 600 mini cupcakes…approx. 300 of each flavor (2) and a batch of gluten free cupcakes.

Last Thursday…Amanda, Luke, Katie, Morgan, and I all met up at Luke’s work.  We were lucky enough for them to let us use their nice big kitchen that had a double oven in it!  I came prepared bringing all of the ingredients, my KitchenAid, and anything else that was needed for the process. Amanda brought her KitchenAid as well.

Luke was kind of in and out of the room every so often helping but it was a really nice time spent with the girls.  There was a lot of talking being done…one topic that absolutely threw me for a loop!  So, let me start off by saying that I haven’t told too many people about my blog in my town. I do post stuff on social media (duh) but I guess I don’t expect people to read it.  Welllll….there we were talking and baking.  Luke announced that he was going to take some pictures of us and so I said “oh yeahh! take as many pictures as you want! I’ll need them for when I write a blog post”

Boom.  And it happened.  

  • Katie: “What?! You have a blog?”
  • Morgan: “Yeah she does! I love reading her blog! I had no idea that she was into makeup as much as I am!”
  • Me: “WHAT?! You read my blog?! How did you find out about it?!”  
  • Morgan: “Instagram”
  • Me: “Ohhh…yeahhh…Instagram…I guess I do post stuff on there huh…”

My face became completely red and it was like instant stress sweat. It was such a shock to me that someone I knew, that I hadn’t told, was reading my blog.  Meanwhile, Amanda and Luke have known about it since the beginning pretty much and they were just laughing.

Okay, back to the cupcakes! We made four batches of Peanut Butter Cup Cupcakes, five batches of Vanilla Bean Cupcakes, and 1 batch of Gluten Free Peanut Butter Cup Cupcakes.  The night was an absolute success.  It was approx. 750 cupcakes total and we baked them all in 6 hours.  The picture below is of all the chocolate cupcakes…We forgot to take a picture of the Vanilla Cupcakes.

The next morning I woke Kyle up and we spent 5 hours frosting them before having to run some other errands for the wedding.

I am so happy that they asked me to make their cupcakes for them and it was an honor to make them for their wedding.  Even though it was crazy to be in the wedding and baking her cupcakes, I had so much fun and I wouldn’t have had it any other way!

    As far as people reading your blog — I’ll admit, it’s super weird to discover that people actually read my blog often, even though I’ve been very public about it!

      It was a lot of work and pretty exhausting throughout the whole weekend, but it was totally worth it!
